Zucchini and Onions
3 cups sliced zucchini
1 onion, sliced
1 bell pepper, sliced
2 cloves minced garlic
Olive Oil for sauteing
1 T chopped fresh basil
salt and pepper to taste
1 cup V-8 juice
Fresh grated Parmesan cheese
Saute zucchinis, bell pepper, onions, and garlic in olive oil, add basil, salt & pepper and V-8. Cook till tender, cover with fresh Parmesan cheese.
